Apple Cinnamon Popcorn

This popcorn is quick to make and reminds me of apple pie! It is tasty, delicious and a wonderful snack for an evening, or served at children’s birthday parties. I use the air-fryer to dry my apple slices, but you can use purchased dried apples for this recipe. 

Ingredients:

50 g of popcorn kernels

2 tablespoons of chopped dried apples

2 tablespoons of chopped nuts

2 tablespoons of dairy-free butter

1 teaspoon of cinnamon powder

1/4 teaspoon of nutmeg

2 teaspoons of brown sugar

1/4 teaspoon of vanilla extract

Method:

Air pop the popcorn. I use a popcorn machine for this but you could also make the popcorn on the stove.

Once it is popped, place this in a large bowl and set it aside.

In a saucepan slowly melt the dairy-free butter.

Add the spices, brown sugar and vanilla extract and stir until blended. This should only take a minute.

Add the chopped apple and nuts and stir in quickly.

Finally, add the popcorn to the pan and stir again.

Ensure as much of the popcorn is coated as you can and serve immediately

Additional Notes:

If you don’t like nuts then add more apple or alternate dried fruits such as cranberries or raisins.

Photography

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Some of these images were reproduced as watercolours. Our favourite images we display at home and friends often asked where we had purchased the pictures! Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
