Build your own: Bruschetta
If I serve my children Bruschetta made up and ready to eat, they probably wont eat it! Build your own seems to work in our house like a dream though.
Serves 4
Ingredients:
4 plum tomatoes
3 tbsp. fresh basil
2 tbsp. vegan cheese (optional)
1 clove garlic, minced
Balsamic vinegar
Olive oil
Salt and Pepper
Gluten Free bread, toasted and sliced
Optional:
Additional herbs of your preference
Vegan butter
Sun-dried tomatoes, peppers
Chili flakes
Method:
Toast the bread and place on a serving plate.
Dice the tomatoes and place in a bowl on the table along side the bread.
Mix the garlic with some olive oil and salt and place in a bowl. Place the herbs in a bowl and the vegan cheese in another. Place these on the table.
Place bottles of balsamic vinegar and olive oil on the table along with the seasonings of salt and pepper.
Serve immediately and let the building begin!
Additional Notes:
I like to serve this with a green salad and cold meats. I also have slices of apple, oranges and some grapes on the dinner table. I have often found my children eat more fruit along side their main meal than they would if I gave it to them as a pudding afterwards.
