Christmas Fruit Salad

When it comes to holiday desserts, there's no shortage of rich and indulgent options. But sometimes, it's nice to have a lighter and fresher option to balance things out. That's where a Christmas fruit salad comes in! Gluten Free, Dairy Free Christmas Fruit Salad with a fantastic twist on an old favourite.

This fruit salad is made with a colourful mix of seasonal fruits of your choice, like pomegranate, kiwi, and clementines, and is dressed in a beautifully spice syrup. It is finally tossed in dessicated coconut giving it a lovely snowy appearance. The result is a refreshing and festive dessert that's perfect for any holiday gathering.

Ingredients:

1 cup of water

1 cup of sugar

Mulled wine sachet

Cut fruit

Desiccated coconut

Method:

In a saucepan combine the water and sugar and add the mulled wine sachet.  Bring to boil on a low heat until sugar has dissolved.  Leave to cool with the mulled wine sachet in it.

Cut the fruit that you enjoy.  At Christmas I add pomegranate, strawberries and oranges as this is what reminds me of Christmas. 

Toss the fruit in the cooled syrup and then place into the serving bowl. 

Finally scatter the coconut evenly over the fruit, tossing occasionally. 

Additional Notes:

Add all the syrup to the fruit if you desire.  My family prefer to save the rest for coffees and cocktails.  Any remaining syrup can be stored in the fridge for a week. 

If you have a pantry full of spices then use all your favourite spices such as cloves, bay leaves, star anise, cinnamon, nutmeg and ginger.

Add the juice of an orange instead of water.  Cooking is all about your preferences on how things taste. 

Add a drop of your favourite spirit such as sherry, whiskey or gin to the syrup when you are making it to give another taste.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
