Honey Fruit Glazed Pork Chops
I love to cook and experiment with food and flavours and this is how this recipe came about. Using up leftovers and wanting a change to the usual way I cook Pork Chops for the family this combination worked so well I wrote it down and it’s now a regular recipe in our home. This can be cooked both in the kitchen and on the BBQ. Honey Fruit Glazed Pork Chops are both Gluten Free and Dairy Free and are delicious served in the summer with a salad and jacket potatoes.
Serves 4
Ingredients:
4 pork loin chops
4 tbsp. clear honey
4 tbsp. orange juice
1 tbsp. sherry (optional)
1 apple peeled and chopped
2 tbsp. olive oil
2.5 cm / 1 inch fresh ginger grated
1 sprig or 1 tbsp. of Rosemary
Sunflower oil
Salt and pepper
Method:
I always make the glaze first so add the honey, sherry, orange juice, 1 tbsp. olive oil (half of what recipe says), ginger, apple and the rosemary into a bowl and mix together.
Season the pork chops with the salt and pepper to taste.
Heat 1 tbsp. olive oil and sunflower oil in the frying pan and cook the pork chops for 2 - 3 minutes on each side on a low heat.
Brush the chops with the glaze and cook for a further 2 - 3 minutes on each side on a low heat.
Pour the rest of the glaze into the frying pan with the pork chops and continue to cook on a low heat. Stir the glaze occasionally and continue to baste and turn the pork chops until cooked through.
You could eat them at this point but the children of the family like them crispy so:
Heat the grill to high and place the pork chops under so that they can get ‘crispy’ on the edges. Turn them and then remove when you are happy that they are done to your satisfaction.
Whilst the pork chops are under the grill you will find you have the delicious glaze still in the frying pan. Spoon this into a bowl and serve on the table alongside the rest of the meal.
Additional Notes:
Rosemary is one of my most favourite herbs, but this can be left out of the recipe or substituted for another if you prefer.
Alternatively, why not try a touch of spice to the recipe!
Save the glaze! I always save any that we don’t eat with the pork chops. It is fantastic with cheese and cold meats.
