Mulled Wine Sorbet
Dairy Free Mulled Wine Sorbet is one for the adults only! Fantastic taste of Christmas in a sorbet and wonderful new addition to our recipes for Christmas. Wine can be difficult for those with gluten intolerances and dairy intolerances, but you can find some wines which state they are suitable for us. If you are at all worried, then use a good quality grape juice in this delicious recipe. It works just as well.
Ingredients:
1 bottle of red wine (gluten-free and dairy-free of course)
1 large orange
16 whole cloves
2 cinnamon sticks
1 apple
1 tsp mixed spice
75 g light muscovado brown sugar
150 ml water
25 g cranberries
200 ml orange juice
45 ml brandy
Orange rind to decorate.
Method:
Wash the fruit and then dry.
Grate some of the rind off the orange and put aside for decoration.
Cut the orange into eight pieces and roughly chop the apple.
Gently heat the wine, orange, cloves, cinnamon, apple, mixed spice, cranberries, muscovado brown sugar and water until the sugar dissolves.
Place a lid on the pan and continue to heat for 15 minutes gently.
Remove from heat and let the mixture cool.
Once cool, strain the mixture into a large bowl. Stir in the orange juice and brandy.
Chill in the fridge until cold.
Pour the mixture into the ice cream machine as per instructions.
Transfer into the freezer.
To serve spoon into wine glasses and decorate with the orange peel.
Additional Notes:
I often freeze my sorbet in small portions so one portion can be taken out at a time as required.
The sorbet will last up to 2 weeks in a freezer.
I would typically use an egg white in a sorbet, but having tried it both ways, I find it tastes better without the egg white.
Instructions without Ice Cream Machine:
Freeze the syrup for 4 hours until mushy.
Then remove from freezer and beat by hand or in a food processor until smooth.
Freeze for another two hours.
I check the sorbet at this point and mix again before freezing for another 3 hours.
