Oven Cooked White Bread Loaf

This is a simple recipe and is loved by my youngest child. I adapted it from a Dove’s Farm Recipe so that I could use my own flour.

The top slice of bread in the picture is using the recipe below with my gluten free all purpose flour mix.

The lower slice of bread is using the original Dove’s Farm recipe. The adapted recipe notes are in the additional notes section below.

Ingredients:

500 g gluten free all purpose flour (recipe below)

2 tsp yeast

2 egg whites

1 tsp vinegar

6 tbsp oil

2 tbsp sugar

400 ml water

Method:

Line the loaf tin.

Place the egg whites, vinegar, sugar water and half of the oil into a bowl and whisk well.

Add the flour and the yeast and mix until you have a smooth, thick batter.

Pour the remaining oil over the dough.

Turn with a spoon and bring together to form a soft dough mass.

Tip the dough into the loaf tin and smooth the top.

Loosely cover with oiled cling film and leave until the dough has risen to the top of the tin.

Preheat the oven when required to 220°C / 200° Fan / 425°F / Gas Mark 7.

Transfer to oven and bake for approximately 55 to 60 minutes. The bottom of the loaf should make a hollow sound when knocked. Remember the bread and pan are very hot so take care when checking on how well it is baked.

Remove from tin and let it cool completely before slicing.

Additional Notes:

If you have oven stones then place the loaf tin on these. I find it helps the bake.

I adapted this recipe for my flour mix. You can use Dove’s Gluten Free White Bread Flour but you will need to add 1 tsp Salt to the ingredients list above.

Loaf tin (approximately 21 cm by 11 cm)

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
