Panasonic Bread Maker: Gluten Free, Wheat Free Spicy Tomato Bread

I love to make bread by hand but when your in a rush this recipe is quick, easy and never fails.

This loaf tastes fabulous with dips or used to make sandwiches or toasted pizza sandwiches!

Bread from the Panasonic Bread Makers always taste better than shop bought loaves. If you know your not going to use it all within a couple of days then simply cut it up and freeze it until you do need it. I often make enough bread for the week ahead and freeze the slices for the family so toast, sandwiches are always available.

One Loaf of Bread.

Ingredients:

310 ml dairy free milk (we use rice milk)

2 tbsp. tomato puree

2 eggs beaten

1 tsp cider vinegar

2 tbsp. vegetable oil

60 g honey

1 1/4 tsp sugar

150 g rice flour

300 g potato starch

2 tsp chilli powder

2 tbsp. herbs of choice

2tsp xanthan gum

2 1/2 tsp yeast

Method:

Menu ‘13’ - ‘Medium or Dark Crust’ (1 hr 55 minutes). Timer not available.

Beat the eggs, tomato puree and milk together and place into the bread maker.

Continue to place the ingredients into the bread maker in the order listed above.

The wrong order may result in poor rising of the bread.

Switch the bread maker on and choose the correct menu.

Follow the instructions of your bread maker.

After the bread has finished baking, remove immediately from the bread pan and shake it free onto a cooling rack.

Don’t worry if the kneading blade is still in the loaf. I would recommend waiting for the bread to cool before gently removing the kneading blade.

Remember to switch the bread maker off.

Store your bread in a cool dry place and consume within 2 days.

Additional Notes:

Some flour may remain on the sides of the loaf but this is normal.

Wait for the loaf to cool before slicing it (if you can).

If you don’t want the loaf too spicy then just reduce the amount of chilli you put into the recipe. My youngest doesn’t like this spicy so I often make two loaves and freeze them both: one with less spice for the youngest of our family!

I use dried mixed herbs, but why not choose your favourite herbs in this recipe. Coriander or basil herbs also taste delicious in this loaf.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
