Paprika Chicken Skewer

Paprika Chicken Skewer

Simple flavours in this chicken skewer recipe and very easy to make ahead of time it is always a popular dish. You can cook this indoors in the oven or out on the BBQ.

Serves 4

Ingredients:

2 to 3 chicken breasts

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

4 cloves garlic

2 tbsp. paprika powder 

Salt to taste

1 tsp. black pepper

Extra virgin olive oil

Method:

Cut the chicken and bell peppers into cubes ready for the skewer. Place the bell peppers in one bowl.

Place into another bowl or bag the chicken along with minced garlic, paprika, pepper and 2 tbsps. of olive oil. Mix this well to combine and leave in the refrigerator for at least 2 hours.

If you are using wood skewers soak them in a bowl of water for about 20 minutes.

Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4.

Thread the chicken and peppers on wood skewers alternatively and place in the for about 20 – 30 minutes or until done.

Turn the skewers every 5 minutes and brush with olive oil if required to get an even cooking.

Additional Notes:

Adjust the spices to suit your tastes. If you like less garlic or paprika then add less to the recipe. Throw in a few herbs occasionally or a squeeze of lemon.

Add mushrooms or cherry tomatoes to the skewer as well as bell peppers.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
