Pasta Carbonara

Gluten free, dairy free Carbonara is a dish I often look longingly at when we are in Italian Restaurants. I hadn’t appreciated how simple it was to create at home until a friend shared this recipe with me. I hope you enjoy it as much as my family does.

Serves 4

Ingredients:

Gluten free pasta for 4 people

1 cup of lardons, chopped pancetta or bacon pieces

Olive oil (optional)

1 garlic clove minced

Salt and pepper

4 eggs lightly beaten

Grated Vegan Cheese

Herbs.

Method:

In a large saucepan cook the pasta following the instructions on the packet.

In a large frying pan saute the bacon until golden. Use olive oil if you wish but I find the bacon has enough fat in it to cook itself. Add the garlic and cook on a low heat for another minute.

Beat the eggs in a bowl.

When the pasta is cooked take 2 tablespoons of water and put in with the eggs. Drain the pasta and tip into the egg mixture and stir.

Take the bacon from the pan and tip into the pasta mixture and stir until mixed through.

Serve straight away and garnish with grated vegan cheese and herbs as you desire. I also serve this dish with cherry tomatoes on the side.

Additional Notes:

Change the taste of this dish by adding different herbs.

Try adding pine nuts to the final dish.

Photography

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Some of these images were reproduced as watercolours. Our favourite images we display at home and friends often asked where we had purchased the pictures! Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
