Pink Lemonade
I love Pink Lemonade! Being the only female in the house, this is a great recipe for me as I love all things pink! It’s delightful to be able to serve a cold glass of this on a hot summer’s day. Very refreshing and a beautiful colour!
Makes approximately 850 ml
Ingredients:
1 lemon
300 g sugar
850 ml boiling water
Summer Berries such as strawberries, raspberries
2 tsp citric acid (optional)
Method:
Peel the lemon zest and place in a bowl. Add a handful of summer berries to the bowl.
Half the lemon and squeeze the juice out of the lemon into the same bowl.
Place the sugar in the bowl with the optional citric acid. Citric acid would add a slightly tart flavour to the cordial and also acts as a preservative.
Tip the boiling water into the bowl and stir until the sugar is dissolved.
Leave this overnight in a cool place.
Strain the mixture and bottle.
Dilute the mixture to your taste with water or sparkling water.
Additional Notes:
The flavours are up to you. If you taste it before you place in the fridge overnight and it is not tart enough then add more lemon or perhaps a lime. Make this recipe your own by adding the flavours that you like.
Try serving this cold with a shot of gin or vodka! Adults only of course!
