Vegetable Stir Fry

Soon after becoming Gluten Free, I quickly learnt how to make a stir fry and I lived on them for a long time! They are an easy meal to plan in advance as you can prepare all the vegetables and the sauce beforehand if you require. This stir fry I served on a bed of gluten free noodles which I had left over from a previous dish, but it is a meal in itself.

Gluten free Dairy Free Vegetable Stir Fry

Ingredients:

For the Garnish

1 tsp of peeled and grated root ginger

Oil for frying

For the Sauce (serves vegetables for 2 to 3 people)

1 garlic clove peeled and chopped

1 red chilli finely chopped (less if you don’t like the heat)

1 tsp. sesame oil

1 tsp. gluten free dairy free hoisin sauce

1 tsp. gluten free soy sauce

1 tsp. chinese five spice

Squeeze of lime

1 tbsp. fresh herbs chopped

For the Stir Fry

415 tin of kidney beans rinsed

Vegetables sliced of your choosing. I cooked with the following as these needed using up:

  • ribbons of carrots

  • celery

  • mushrooms

  • bell peppers

  • mangetout

  • broccoli

  • beansprouts

You could add any vegetables of your choosing. For example:

  • cabbage

  • onion

  • cauliflower

  • pak choi

Method:

Mix up the sauce ingredients and place to one side.

Peel and chop the ginger into slices. Fry some oil in the frying pan and when hot place the slices of ginger into the oil. Remove when they are golden and place to one side.

Remove oil from frying pan. Put onto a low heat and add the sauce to the pan. Leave to cook for a couple of minutes. Turn the heat up to medium and add the vegetables in order of what needs more cooking. I added the broccoli, celery and kidney beans in first. After a few minutes I turned up the heat again and added the final vegetables. At this point the dish needs little cooking so after a couple of minutes take off the heat and serve.

I served with noodles and topped the dish with the ginger. i chop extra herbs up from the garden and place them on the table for those who like more herbs. I added the ginger into the dish as the top garnish as some of my family like ginger and some don’t.

Additional Notes:

If you’re not a great fan of ginger, then consider having a garnish of peanuts or extra garden herbs on top of the dish.

Substitute cooked meat of your choice instead of kidney beans.

You can serve this as it is or with noodles or rice. Alternatively use the ingredients in a wrap.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
