Blackberry Freezer Jam
Freezer jam is a fantastic way to use up fruit and can be stored conveniently in your freezer.
Ingredients:
5 cups blackberries
1 1/2 cups sugar
1 1/2 tbsp lemon juice
Method:
Wash the fruit.
Add blackberries, sugar and lemon juice to a saucepan.
Mash the fruit to the consistency that you desire.
Turn the heat to medium-low and simmer the jam until it reaches gel stage, stirring to keep the bubbles down.
This is a low sugar batch and it should take 20-30 minutes.
Test for gel stage on a plate in the freezer.
Pour jam into prepared canning jars or freezer containers.
Remember to leave a 1/2 inch space at the top.
Seal the jars/containers and let stand at room temperature until cool.
Additional Notes:
Add the flavour you enjoy to the dish, such as 1/2 tsp mixed spice.
Freezing Notes:
This can be refrigerated for up to 3 weeks or freeze for up to 6 months.
