Chicken Schnitzel

Gluten-free, Dairy-free Chicken Schnitzel is fun to make at home. My children love preparing the pork and dipping it into the egg and breadcrumbs before I cook it.

Ingredients:

900 g chicken

1/3 cup rice flour

1 tsp paprika

1/2 tsp pepper

1/2 tsp salt

2 eggs

2 cups gluten-free bread crumbs

Oil

Optional:

Garlic

Herbs

Spice such as Chilli

Method:

Slice the chicken if it’s too thick. About 1/2 inch thick is perfect.

Place the chicken in a bag and hit them with something heavy. I let my children use a rolling pin for this.

They need to end up being between a 1/4 and a 1/8 inch thick.

In a bowl, beat the eggs. In another bowl place the rice flour and in another the gluten-free breadcrumbs with paprika, salt and pepper (mix them well).

Place the chicken into the egg and cover, then place in the rice flour. Place back into the egg and finally into the breadcrumbs.

Heat a large non-stick pan over medium heat and add enough oil to cover the bottom of the pan.

Once the oil is hot, add the pork (a few at a time) and cook for 3 - 4 minutes each side. They need to be cooked through and golden in colour.

Reduce the heat if they are browning too quickly.

Remove from the pan and place onto a paper towel before serving.

Additional Notes:

This can be frozen. I reheat ours in the air fryer for 10 minutes.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
