This cake is gluten-free and dairy-free, but you'd never know it. The rich chocolate flavour and moist texture make it a crowd-pleaser, regardless of dietary restrictions. It's perfect for those who are gluten-intolerant, have celiac disease, or are simply looking for a healthier option.

To make this cake, you'll need a few key ingredients, including gluten-free all-purpose flour, cacao powder, baking powder, eggs, soft brown sugar, ripe bananas, vanilla extract, vegetable oil, and chocolate chips or chunks. You'll also need some mixed spice, which adds a warm and fragrant flavor to the cake.

The recipe is straightforward and easy to follow. Simply mix all of the wet ingredients together in a bowl or mixer, then stir in the dry ingredients until everything is well combined. Add in your chocolate chips or chunks, and you're ready to bake.

Ingredients:

125 g gluten free all purpose flour (recipe below - or use a gluten free self raising flour)

50 g cacao powder

2 tsps. baking powder

1/2 tsp salt

2 large eggs

200 g soft brown sugar

2 ripe bananas

1 tsp vanilla extract

125 ml vegetable oil

1 cup of chocolate chip or chocolate chunks (I use a mixture of both)

1 1/2 tsps. mixed spice

Method:

Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4 and line the loaf tin.

In a mixer or bowl add all the ingredients of eggs, sugar, bananas, flavouring and oil and whisk together.

Then stir the dry ingredients in until mixed.

Transfer the cake mix into the prepared loaf tin and place in oven for 50 minutes.

Bake until golden and a skewer inserted in the centre comes out dry. 

Let cool completely in tin before transferring to a wire rack.  

Additional Notes:

Make this into a tray bake but remember to reduce the cooking time (dependent on size of tin).

Some optional items to place in this beautiful banana bread is a handful of nuts or cherries. Throw in items that you enjoy to make this uniquely yours.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals.
