Jane’s Carrot Cake

Carrot cake is a classic dessert that is perfect for any occasion. But for those with dietary restrictions, finding a delicious gluten-free and dairy-free carrot cake recipe can be a challenge. That's why we're excited to share a recipe for a lovely gluten-free, dairy-free carrot cake that is simple to make and tastes amazing!

This recipe is easy to follow and requires only a few basic ingredients. You can make the cake as it is or add some orange zest, nuts, or dried fruit for some extra flavour. You can also dress it up with a simple buttercream frosting (dairy-free, of course) or keep it simple, as the cake is delicious on its own.

To make this cake, you will need eggs, grated carrots, gluten-free flour, light brown sugar, white sugar, oil, baking soda, cinnamon, vanilla, and salt. Simply preheat your oven to 180°C (350°F) and lightly grease or line a 20 cm cake tin. Then mix all the ingredients together until well combined and bake for 40 to 45 minutes until browned. Let the cake cool for five minutes on the tray before transferring it to a cooling rack.

One of the best things about this cake is that it's incredibly versatile. You can experiment with different ingredients to find the perfect combination for your taste buds. For example, you can add blueberries, dried fruit, or nuts to the recipe for some added texture and flavor. The possibilities are endless!

It's worth noting that gluten-free flour can vary greatly, so be sure to use a brand that works well with this recipe. We recommend Dove Flour, but you can also try making your own gluten-free flour using a combination of different flours. You can find a recipe for our own all-purpose gluten-free flour on our website.

This cake is perfect for freezing, so you can make a batch ahead of time for unexpected guests or special occasions. It's also a great option for anyone who is looking for a healthier dessert option without sacrificing flavor.

In conclusion, this gluten-free and dairy-free carrot cake is a must-try for anyone who loves cake. It's simple to make, versatile, and absolutely delicious. So why not give it a try and see for yourself? We guarantee you won't be disappointed!

Additional Notes:

I love adding blueberries, dried fruit and nuts to this cake. Experiment and see what you like to add.

Gluten free flour changes vastly - I have used flours before in this cake that made the grated carrot float to the top of the cake! I use my own combination of flour in my recipes but Dove Flour works well every time. See below for link to my recipe for my own combination of general all purpose gluten free flour.

Equipment Used:

KitchenAid Stand Mixer or hand whisk

Spoon

20 cm cake tin

Cooling rack.

I have auto-immune diseases and expected to be on medicine for the rest of my life, but I didn't want to live like that. My rheumatology Doctor was so supportive of the change I wanted to make, and with their help, I now manage my auto-immune diseases by being strict with my diet.

It can be quite frightening when you first find out you have to change the way you eat but for some of us' Food is our medicine.'

I have several websites, write blogs, and I'm currently in the process of writing a book.
