Raspberry Gluten Free Pancakes

Everyone loves Pancakes in our home and I like to mix the recipe up once in a while so that Gluten Free, Dairy Free food doesn’t become monotonous.  I love the look of Raspberry’s in the Pancakes.  If you don’t like raspberry’s then please use blueberries or some chopped cherries or blackberries.  These can be frozen and then reheated in the mornings for the children for a quick but delicious and nutritious breakfast. 

Ingredients:

315 g of my gluten free pancake / waffle mix (recipe below)

1 banana mashed

1 tsp vanilla extract

1 egg beaten

375 ml dairy free rice milk

1 tablespoon vegetable oil

½ tsp cinnamon

Raspberry

 

Method:

Place all the ingredients in a bowl and stir until combined.

Heat pan over medium heat and lightly grease.  I use a paper towel to do this.

Pour a spoonful of mix into the pan and cook one side until golden (approximately 2 minutes). 

Flip the pancake and cook on the other side for approximately 2 minutes.

Serve immediately with choice of topping.

If you are not eating immediately place on a cooling rack and then freeze for later.

Additional Notes:

Remember to freeze the leftovers for an easy reach breakfast on school mornings. 

If you don’t like Raspberry then try some other fruit.  Strawberry, blueberry, blackberry all taste delicious in pancakes. 

Add spices such as pumpkin spice for a slightly different taste!

Photography

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Some of these images were reproduced as watercolours. Our favourite images we display at home and friends often asked where we had purchased the pictures! Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
