Spinach Hummus
This colourful dish is a Spinach and chickpea hummus. It has an amazing colour and is a wonderful dip.
A friend served this at lunch a few years ago and I simply love this recipe now. I loved the colour and how healthy it was, but I must admit that I added the spices to her original recipe card that she shared with me.
Spinach hummus is a delicious and healthy twist on traditional hummus. It's a great way to add some extra nutrients to your snack or meal. The recipe for spinach hummus is quite simple and easy to make at home. All you need is some fresh spinach leaves, chickpeas, tahini, lemon juice, garlic, and olive oil. To make spinach hummus, start by blending the chickpeas, tahini, lemon juice, and garlic in a food processor until smooth. Then, add the spinach leaves and continue to blend until the mixture is creamy and well combined. Drizzle in some olive oil while blending until you reach your desired consistency.
You can serve spinach hummus with pita bread, crackers, or fresh veggies like carrots, celery, or cucumber. It's a healthy and tasty snack that's perfect for any time of day. Plus, it's a great way to sneak some extra greens into your diet!
Ingredients:
400 g tin of chickpeas
60 g spinach
1 tbsp tahini
Juice of 1/2 lemon
2 tbsp olive oil
1 tbsp ground cumin
1 tsp coriander
1 garlic clove crushed or chopped
Sea salt
Approximately 125 ml water.
Method:
Place all the ingredients except the water into the blender and mix to a paste.
Gradually add water until the hummus reaches a consistency you like.
Additional Notes:
Garnish this dish with paprika and parsley. Add more spices if they are to your taste. Serve with chunky bread or fresh vegetables ready to dip.
