Sundried Tomato and Herb Pastry Rolls
I make these Gluten Free and Dairy Free Sundried Tomato and Herb Pastry Rolls and my boys love them. Fantastic as snacks or for the lunchbox you can add extra flavours to this simple dish to suit your palate.
Makes 8 rolls
Ingredients:
2 Sundried Tomatoes
8 Cherry Tomatoes
Selection of Fresh Herbs of your choice
1 Puff Pastry Roll (I purchased this)
Egg or Dairy free milk for glaze
Grated Vegan Cheese
Method:

Heat the oven as per instructions on your pastry.
Place grease proof paper onto a baking tray.
Roll out the pastry into a circle and cut into 8 sections.
Mix the Tomatoes with herb in a food processor and then place onto the sections.
Roll the pastry up and place onto the baking tray.
Glaze with your preferred egg or milk.
Place in the oven until golden brown. For the pastry I use cooking takes about 15 minutes.
Take the baking tray out and grate the vegan cheese over the pastry rolls and place back in the oven for a couple of minutes so that it melts.
Remove from oven and place onto a cooling rack.
Additional Notes:
Change the taste of this dish by adding different spices.
