Tray Baked Frittata

A quick meal that is colourful, delicious and great for using up leftover vegetables or meat.  This is my favourite way of cooking eggs for the children and if you have any spare you can leave it in the fridge for a couple of days or freeze it for another day.  Fantastic for breakfasts or a snack on the run. 

Ingredients:

Eggs

Optional:

Butter, milk

Salt and pepper

Spices,

Chopped herbs

Chopped vegetables,

Chopped cooked meat

Grated cheese

Method:

Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4

Place baking paper on a baking sheet or alternatively cook in muffin cases

Whisk up the egg and add butter and milk if you wish.  I tend to leave these out.

Pour onto the baking sheet.

Place the chopped vegetables, meat, herbs and spices evenly over the egg.

Place in the oven until cooked.  You can pierce it with a skewer if you are at all unsure.  The thicker the mixture the longer it will take.  A thin Frittata may take no more than 10 minutes, muffins up to 20 minutes and thicker frittata approximately 25 minutes.  Check regularly through cooking. 

If I am adding the cheese I turn the oven off once cooked, grate the cheese on top of the egg and place the dish back into the oven for 5 minutes.  I personally don’t like the smell of Vegan Cheese when it is heated which is why I use this method.

Additional Notes:

Add different vegetables to different areas.  If one child doesn’t like Tomatoes, leave it off one end of the dish and serve this area to them. 

Get the children involved!  Let them choose what will be on the Frittata this mealtime. 

Can be served for Breakfast, Lunch or Dinner.  Serve with Toast, Salad, Chips.  This dish is versatile and quick. 

You can freeze frittata. I have found ingredients may affect how well they freeze and retain flavour and texture. They can be frozen for up to 3 months but I prefer to use mine within the month (personal preference). Remember to let them cool before freezing in airtight, labelled and dated, freezer containers.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
