Balsamic Roasted Vegetables
Balsamic Roasted Vegetables is a flavourful side that's perfect to meal prep for the week.
Ingredients:
1 broccoli florets
1 large bell pepper chopped
1 medium courgette sliced
5 medium carrots chopped
2 tbsp. balsamic vinegar
2 tbsp. olive oil
1 pinch salt (to taste)
1 tsp. pepper
Method:
Preheat the oven to 200°C / 180° Fan / 400°F / Gas Mark 6
Chop and combine broccoli, bell pepper, courgette, carrots, balsamic vinegar, olive oil, salt and pepper in an oven proof dish.
Mix well to coat the vegetables.
Place them in the oven and cook for about 60 minutes, tossing every 15 minutes.
Additional Notes:
Make this dish your own by adding spices or different herbs to the dish.
