Gluten Free, Dairy Free Milk Loaf
Gluten free bread is wonderful when cooked fresh. This bread is cooked completely in the Panasonic Breadmaker and has a soft texture and fantastic flavour.
Ingredients:
1 egg
275 ml milk (I used rice milk)
15 ml sunflower oil
3/4 tsp salt
1 tbsp. caster sugar
225 g rice flour
2 tsp xanthum gum
7 grams dried active yeast
Method:
Beat together the egg and milk and place into the bread maker pan
Add all the remaining ingredients in the order listed above
Set the machine to a menu of 1 hr 55 minutes. Medium or Dark Crust (your preference)
Towards the end of the cooking, check the bread. If it is golden and firm to the touch then remove.
Remove from the machine and remember to switch it off.
Leave the bread to cool in the pan for 10 minutes before turning out onto a wire rack.
Remove the paddle when the bread is cool.
Additional Notes:
Eat within 4 days or freeze for future use.
Remember to keep an eye on this when cooking. Each bread maker is unique and I always check regularly when I try a new recipe in my machine.
